Hello everyone!  Tonight for dinner I am making Garlic Butter Salmon and a quinoa strawberry candied walnut salad!  Sounds fancy, but it's not!

I am going to start off with the quinoa.  Quinoa is an amazing protein!  Add a cup of quinoa in the Pampered Chef Quick Cooker along with a cup of water,  a pinch of salt and a teaspoon of oil.  Mix it up.  Set the Pampered Chef Quick Cooker on whole grains for three minutes and it does it's thing with no help from me!  I do that first because it will probably take the longest because it needs to build pressure.  

Next is the salmon!  Cut it into portion sized pieces .  Season with salt and garlic powder.  Add butter to your pan.  My favorite pan is the Non Stick Stainless Steel from Pampered Chef!  Put the salmon in the pan with the skin side up first.  Let it cook flipping over as needed.

This isn't part of the recipe – but candied walnuts are SOOO good, so I am going to cook up some of those for our salad.  Preheat the pan.  Add the nuts and let them get a little toasty.  In a separate container add a little butter, a little brown sugar, salt and cinnamon.  Only in the fall can you get Cinnamon Plus from Pampered Chef – look for it!  It's delicious!!    Melt your butter in the microwave and then add in  brown sugar, cinnamon and salt.  Add that to your nuts and YUM!

For the salad, I use a baby arugula and spinach mix.  Cut the tops off of your strawberries and grab your Pampered Chef Quick Slice.   Anytime I am chopping one fruit or veggie, I grab the Quick Slice!  It slices it so quickly.  Great time saver!  You can use it on all kinds of different things.

Now it's time to check the salmon.  Use the Pampered Chef meat thermometer.  This is an easy way to make sure it's done!

Add your cooked quinoa to your salad with strawberries and lemon pepper vinaigrette.  Put your candied nuts on top.  Serve with salmon. 

Quick, easy and healthy meal that the family will love!  Even my toddler finished his plate.  I put some salmon on his plate and a little quinoa, strawberries and nuts.  He LOVED the nuts.
