Intended Audience: Anyone needing some healthy eats as we try to stay safe from the unorganized chaos in our world.

Clean Up: Moderate (clean up = supplies)
Supplies Needed:

  1. Portable Burner
  2. Hot Pot with Divider
  3. Butane Fuel Canister
  4. Slotted ladle
  5. Plates for uncooked ingredients
  6. Bowls
  7. Utensils

Note - Items 1-3 might be cheaper at your asian markets.

Ingredients:

Honestly, you can add whatever leafy vegetable and protein sources you like! We had these in our fridge/pantry and just set things up:

  • green onions - a bunch
  • Hon Dashi
  • 1 piece of Dried seaweed (not roasted seaweed)
    • I used this version – check out the leaves!
    • 2 dried shitake mushrooms (These are so much cheaper at your asian markets. They average about $5 for a package).
  • Firm Tofu - cut into blocks
  • Spinach
  • Bok Choy
  • Shrimp (head on) - approximately 2 lbs
  • Mussels - approximately a lb
  • shabu shabu meat = thinly sliced lamb, beef, or chicken - approximately 2 lbs
  • Optional Carb items:
    • wide glass noodle - 1-2 servings. The kids LOVE this version, but check out your asian grocery stores. It's going to be a lot cheaper.
    • Fish cakes - the kids really enjoyed this
  • Additional ideas for items:
    • quail eggs
    • mushrooms
    • napa cabbage
    • bean sprouts

Dipping Sauce(s):

Soup Base:

  • Side 1:
    • fill with water
    • 2 tsp of Hon Dashi (see above ingredient)
    • 2 stalks of green onions cut up
  • Side 2:
    • fill with water
    • dried seaweed
    • dried shitake mushroom
    • 2 stalks of green onions cut up

Set the pot on your portable burner and start lighting things up. I like adding the vegetables first (for added soup flavor), then tofu, and then protein. The proteins above took no more than 4 minutes to fully cook (so fast)!

As items are cooked, start fishing them out with the slotted ladle into the bowls. What was great about this meal was that there was something for everyone...IN 1 POT!

Not only was this a fun and healthy meal, it gave us some much needed safety and quality time around our bowls of healthy comfort.
