My kids love snack cakes. I whipped this little cake. I added a 1/2 cup of finely shredded zucchinni. I am known for adding fruits and vegetables to our desserts.

preheat the oven to 350 degrees.

This makes a 8 by 8 cake

1 cup of flour

1 cup of sugar

1 teaspoon of baking soda

1 egg

1 teaspoon of vanilla

1 cup water

1/4 cup of oil(your choice)

1/2 cup finely grated zucchinni

I simply slapped this into a mixing bowl. Beat it together for 2 minutes in my mixer.

Pour into a greased 8 by 8 pan bake 25 minutes
