Pumpkins and apples are usually the stars during autumn, but pears are easily one of my very favorite fruits when the days get shorter. This Spiced Pear Oatmeal is so tasty - as well as hearty - it makes a fantastic breakfast for a cold fall or winter morning, or even during the holidays!
This recipe is covertly healthy, too. You'd never know it is sweetened only with pears and real maple syrup. And in addition to heart-healthy oats, it's loaded with flax and chia seeds, which work to keep you full much longer than other breakfasts.
But frankly, the healthy benefits come second to how delicious this stuff is! The natural sweetness from the pears, the maple syrup, the vanilla, and all the warm flavors from the apple pie spice work so well together. This is how oatmeal should always taste!
NOTE: You can adjust and/or substitute the spices, if you prefer. The original recipe called for cinnamon, cardamom, and nutmeg. All of these can typically be found in apple pie spice or pumpkin pie spice blends. Others like to add ground ginger, clove, or even star anise. Feel free to be creative!
TIP: If you prefer, you can ground the flax and chia in a grinder to "hide" them from picky eaters!
1/2 TBSP coconut oil 1 pear, finely chopped (I prefer Bartlett, skin on is fine) 1 tsp apple pie spice Pinch of salt 1 C milk of your choice 1 C water 3/4 C plus 2 TBSP rolled oats 2 TBSP flax seeds 1 TBSP chia seeds 2 TBSP maple syrup 1 tsp vanilla extract
Place the coconut oil in a medium sauce pot over medium heat. Once hot, add the finely chopped pear with spices and salt and sauté for 5 minutes until the pears are softened.
Add the milk and water to the pot, stir to combine then add the oats, chia seeds and flax seeds. Lower the heat to medium-low and cook the oatmeal for about 10-15 minutes until oats have thickened and absorbed most of the liquid.
Meanwhile, make the spiced pear topping.
Spiced Pear Topping 1 pear, chopped (I prefer Bartlett, skin on is fine) 1/2 TBSP coconut oil 1 tsp apple pie spice 1 TBSP maple syrup
Heat the coconut oil to a small skillet over medium heat. Once hot, add the pears and spices.
Cook until the pears start to soften, about 3-5 minutes then lower the heat to medium-low, add the maple syrup and continue cooking until the pears caramelize in the syrup and soften further. Remove from heat and set aside.
To assemble and serve Once oatmeal is finished cooking, stir the vanilla and maple syrup into the pot. Portion into serving bowls and top with the spiced pears.
