One of my favorite aspects of watching cooking competition shows from other countries is seeing how our food differs. Whether it be a difference in ingredients or just a different way of preparing the same ingredients. It's a great way to keep interest and variety in your meals.
The other day, I was watching a British cooking show, and a contestant made scalloped apples. I'd certainly heard of - and adore - scalloped potatoes, but a dish of hot, spiced, creamy apples? I was intrigued! I couldn't find many recipes online, so I'm even sure how common these are, even in Britain.
The single recipe I found includes raisins, walnuts, vanilla, cinnamon, nutmeg, and clove. And it's delicious! The author specified serving them over pancakes, waffles, or oatmeal. I think they'd also be fantastic over vanilla ice cream. Personally, I can recommend them simply shoveled into your face with a spoon, piping hot right out of the oven, but that's neither here nor there...
TIP: I used Trader Joe's Golden Berry Blend, one of my pantry staple-favorites that includes plain raisins, golden raisins, dried cranberries, and dried blueberries. I can heartily recommend doing the same; it's delicious!
NOTE: Diet substitutions work smoothly, as well. Swap out the sugar for allulose or stevia. Swap out the AP flour for a GF option. Swap out the milk for an alterative. Omit the nuts. It all works!
TIP: I used my old-school metal apple corer/peeler/slicer to prep the apples quickly. I love that thing, and I'll heartily recommend it for any dish that calls for lots of sliced apples.
Scalloped Apples
(Original recipe: Just a Pinch)
6 apples, peeled, cored and sliced
1/2 C sugar
3 TBSP flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp clove
1/2 C raisins (or dried cranberries)
1/2 C walnuts, chopped
1 tsp vanilla extract
1/2 C milk
Grease a 2 quart casserole dish and set aside.
In a small bowl, mix together sugar, flour, cinnamon, nutmeg, and cloves.
In a second small bowl, mix the milk and vanilla extract.
In a large bowl, stir together the apples, raisins, walnuts, and spice mix. Toss until evenly distributed.
Spoon the coated apples into your prepared dish. Pour milk mixture evenly over the apples.
Bake at 350F for 1 hour, or until soft and bubbly. Allow to cool slightly before serving.
