Some days are peanut butter and jelly on honey wheat.
Some days are smoked salmon with avocado or cream cheese on a bagel.
Other days, still, are all out sandwiches from the deli complete with turkey, swiss, mayo, mustard, spinach, tomato, red onion, green pepper, black olives and heated for a few minutes.
While we cannot change our birth or death as easily as choosing between a bagel, sourdough, rye or whole wheat . . . we can choose what we do to fill our lives. The past two days have been pretty much peanut butter and jelly for me. Just doing what needs to be done -- nothing spectacular. Work. Errands. Eat, sleep and do it again.
Some people will always be satisfied with peanut butter and jelly. They like the known of each day, the reliability of sameness. Others go to the opposite end and want something different every day. Something with a dash of spice, a hint of exotic, a bit of savory mixed with the sweet.
Which reminds me . . .
I had a new burger at one of our local restaurants the other night and it was DELICIOUS!! The pepper jelly cheeseburger.
In a large mixing bowl, stir together ground beef, cajun seasoning and salt and pepper to taste. Divide and shape into 4, 1/4-lb patties. Grill or fry patties to desired doneness. Top each with a 1 oz smear of cream cheese, a tablespoon of sweet pepper jelly and jalapeno pepper slices to taste. Serve with chips, fries, or coleslaw.
