I have never been a fan of soggy, cooked greens. I can barely eat the coveted spinach artichoke dip I think about. There are many ways to sneak greens into the family diet. I dehydrated a ton of kale and spinach this summer. I ground it into a powder. I put the greens powder into soups and casseroles. I store the powder in the freezer. I put kale powder into brownies this week and no one noticed.

Kale and spinach are great to cut into bite-size pieces and serve raw. I add nuts and fruit to these salads.

I saute kale and spinach with olive oil, sea salt, and garlic. This makes a great topping for grain bowls and soups.

Smoothies are great packed with greens.
