This is a salad, I definitely want to try this summer. I found it on the new seasons Market website.
"Crisp apple slices, red onion, toasted pecans, and a tangy apple cider vinaigrette make this spinach salad a great work lunch or side at dinner."

Total Time: 15 minutes
Ingredients:
Dressing:
1/3 cup extra-virgin olive oil
3 tablespoons apple cider vinegar
1 1/2 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon Kosher salt
1/2 teaspoon black pepper
Salad:
1 large sweet-tart apple, rinsed, cored and thinly sliced
1/4 cup red onion, thinly sliced
1 pound washed and dried spinach leaves
1/2 cup toasted pecans, chopped
Optional Ingredients
shaved parmesan or crumbled blue cheese
Directions:
In a large serving bowl, whisk together the oil, vinegar, mustard, honey, salt and black pepper until thick and emulsified. Taste and adjust seasoning with salt, pepper, and vinegar.
Add apple and onion. Toss to coat.
Add spinach and pecans, toss again, and serve.
Optional: Top with shaved parmesan or crumbled blue cheese!
This Salad would also be really good with some rotisserie chicken or some salmon that was either grilled or smoked.
