Produce and meats are the highest parts of the food budget. Mindful shopping using seasonal produce. We are small homesteaders. We raise meat and grow produce. I work very hard to perserve these items to last us all winter and into the spring. All summer, I can peaches. apple sauce, and pears. I freeze berries and dry apricots. We happen to grow apples and pears. We also live in an area that is abundant in fruit orchards. I can vegetables and freeze vegetables, this way I have a variety of textures.
During the winter, we purchase vegetables that we do not have in the root cellar. Cabbage, green vegetables, etc.
Baking bread and other baked goods from my bulk stores is another way I save money all year.
We grow salad greens and kale all year.
Batch cooking like this:
My grammy made this for us as children.
Grammy Doris's recipe
2 pounds of ground beef
1 tablespoon of bacon grease
1 green pepper
1 onion
1 pound of Noodles
1 can of tomato soup.
My version:
1 use tomato sauce and Italian seasoning.
My great grammy was a very simple cook. She didn't use many seasonings.
I add different things to maintain a healthy diet. For example, I had my dried vegetable powders to soups, salad dressing, sauces, and grains. I add dried fruits and nuts to salads.
The above recipe serves 6 large bowls like this.
I have added lentils to this meal and carrots as well. Teenagers eat a lot, this is a filling lunch that holds up well in the fridge. This was the kid's lunch today. I served it with garlic toast. green beans, and pears.
This lunch is an example of using my pantry and freezer. I made the bread, the pasta was from bulk shopping, green beans from my garden and pears from the orchard. I served oatmilk for a beverage.
