Hungry pilgrims are on their way. Be prepared!
Whether you are hosting the Big Feast or just the Big Breakfast before the Big Feast, you'll need some small bites to keep the Pilgrims of any age, fed and happy. Muffins sound healthier than cookies and can stave off rumbling stomachs while the Big Bird is taking its sweet time. (I have a story for another time about our big bird that was excavated this very day from the deep freeze to the house fridge. It's THAT BIG and needs an early start.)
Make a batch of one of these recipes—or all three—today and freeze. The Boy Scouts motto, "Be Prepared" has nothing on you and your freezer bags of muffins. These also work for hungry Boy Scouts. I bought freezer bags at Costco yesterday and I wasn't even a Girl Scout. Just one smart cookie (or muffin, depending.)
Here you go:
Double Chocolate Banana Muffins (egg free)
1 1/2 c flour
1/2 c cocoa powder
1 t baking powder
1/2 c baking soda
2/3 c sugar
1/2 c plain yogurt
2-3 mashed bananas
1 1/2 t vanilla
1/3 c oil
3/4 c chocolate chips
Mash bananas. Add sugar, yogurt, vanilla, oil. Stir til combined. Add dry ingredients, then fold in chocolate chips. Bake at 350 for 20 minutes. Makes 12.
Tollhouse Muffins
2 c flour
1/3 c sugar
1/3 c brown sugar
1/2 t salt
1 t baking soda
2 t baking powder
1 c sour cream
1 cube melted butter
1 egg
1 t vanilla
1 c chocolate chips
Preheat oven 350. Mix together first 6 ingredients. Melt butter in microwave. Stir in butter, egg, vanilla, and chocolate chips. Scoop into muffin pans. Bake 15 min or until browned. Makes 16-18.
Banana Bran Muffins
2 c bran flakes cereal
1 c milk
1/2 c mashed banana
1/4 c oil
1 egg, beaten
1/4 c sugar
1 c flour
1 T baking powder
1/2 salt
1/2 t cinnamon
Preheat oven 400 degrees. Combine bran flakes and milk. Let stand 5 minutes. Add mashed banana, oil, and egg to the cereal/milk mixture; mix well. In large bowl, stir together sugar, flour, baking powder, salt, and cinnamon. Make a well in the center of the bowl with dry ingredients; add banana/cereal liquid mixture, stirring just until moistened. sppon batter into greased juffin pans, filling 2/3 full. Bake at 400 degrees 25 min until golden brown. Makes 12.
