Let's face it, inflation is hitting all of our grocery carts. This recipe comes from Taste Home's Soups, stews, and more. I didn't care for the recipe, so I tweaked it.
This summer I purchased Tortellini packages for 25 cents on clearance. I purchased 100 packages of it. My family loves tortellini. Anyone who has raised teenage boys know how they are always ready to eat. These are easily to use in soups, as pasta salads, and pasta meals. I cannot make these for 25 cents. That is the key to using the to using the clearance rack to your advantage.
The Soup:
28 ounces of crushed tomatoes
12 ounces of tomato sauce
4 qt of vegetable broth
2 zucchni shredded
3 diced carrots
1 onion diced
3 celery(peel that first layer off, it makes it nicer to eat)
1 cup of torn spinach leaves
4 ounces of white beans.
Basil
garlic to taste
Saute your root vegetables in olive oil with garlic and basil. Add your tomato products and broth.
SImmer for 40 minutes. Add your spinach while, the pasta cooks. Cook your tortellini to al dente'. Drain add to your soup.
This is a very hearty soup.
This is another meal that is well under 5 dollars with leftovers.
This would still be a meal under 10 dollars if you were using tortellini from the freezer section or the dry goods section. You can also make these from gluten free flour by hand. I made this soup for my daughter when she visited. She enjoyed it.
Soups and casseroles are a way to stretch your food dollars. Sides round out the meal with seasonal fruits, salads, and breads.
