When my Youtube channel was up, I enjoyed showing how to use leftovers in meaningful planned and not planned ways. My family enjoys meat, I go back and forth. Sometimes, I eat meat and sometimes I don't. So, sometimes, I cook too much meat for 1 meal.
Last's night's pot roast, scalloped potatoes, brussel sprouts, the day before Spanish rice and refried beans.
The potr oast yielded 3 cups of beef broth. That is tucked away in the freezer.
The kids love loaded burittos. I spread the fried beans onto the tortillas, added cheese, Spanish rice, and strips of pot roast. I toasted them in a pan. I added guac, sour, and salsa for dipping. Our kids love stuff like this.
My husband had scalloped potatoes, brussel sprouts, and potroast. My vegetarian choice was the scalloped potatoes, brussel sprouts, and salad.
Planning ahead especially with cooking proteins, items that require more labor, it is smart to plan a couple of meals out these items.
