We had a bunch of rain. We were glad to have it. We have a ton of goat milk in the freezer. It is strange not having our goats. My husband and I felt that removing the prey will reduce the predators. We will be bringing new goats in the summer. Our little neighbor asked me if I got rid of the goats because she is naught and sneaks into my yard. He rmother was sure that was the reason. I told them no, it was the coyotes.
I made frozen smoothie bowls cookies for the week. This week's meal prep was vegan rice bowls with tofu.
Today's lunch bowls
I paired brown rice, zoodles, picked carrots, mushrooms, corn, kale, and tofu. under than 3 dollars per bowls.
Roasted sweet pea pods with oil, thyme, parsley, and pharm cheese. Quiona bed with porkchop(boys had 2)and roasted beets seasoned with balasmic vinegar and honey. I also served applesauce and a salad The main dish served in under 3 dollars per plate.
In these tough economic times, it is possible to create meals that are affordable and satisfying.
The beets, carrots, corn, and radishes are homegrown. The grains are purchased in bulk. The tofu and pork were purchased on clearance. The beets and corn were stored in the freezer. The radishes were grown in the window.
Creating rice and grain bowls work well to create filling meals. All you need is a grain, a green, vegetables, a protein source, and a sauce. With teenagers, the sauce is the key. You can whip up intersting sauces for pennies.
My family likes desserts. I make sheet pan cakes and brownies. They last the week. Their perference has been citrus cakes. I have made lime, lemon, and orange cream cakes. Very easy and inexpensive. the homemaker that is struggling to create a filling table for her family should look at making inexpensive additions to the meal. Soup at the beginning of the meal, crackers & cheese, or salad. Teenagers are always hungry. I always make their portions bigger. I always put a plate of raw vegetables and fruit on the table.
