It's super simple to make and is packed with protein since it contains both quinoa and chickpeas. It's so delicious and can stay in the fridge for about five days. I like to eat it on its own or as a side dish with some meat protein.

HOW TO PREPARE: I cooked the quinoa first and then chopped all of the ingredients & mixed them together in a large bowl.
Then, I added 4 tablespoons of olive oil, the juice from a lemon and salt and pepper to taste! It seriously tastes even better the next day after it's been refrigerated, but you can also eat it right after mixing it.
