It had been a while since I attended a gathering of former colleagues. We had started a tradition of getting together for a potluck meal. It was a good way of having a leisurely meal without the pressure of having to leave the meeting venue. Many restaurants have started to impose a 60-minute dine-in limit. (Since all of us are no longer colleagues, we have a lot of catching up to do. Potluck meals mean that we can show off our cooking skills and talk about new cooking appliances or recipes we had tried out. During the Covid restrictions, we could only gather in small groups. Thank goodness those days are over, but it is still nice to meet in smaller groups.)
A few weeks ago, I was reminded that I had committed to a lunch appointment on the last Sunday of July. I offered to cook and my friends offered to bring food and dessert. The last week of July proved to be an exceedingly busy week, but I didn't want to let my friends down. I found time in between running from place to place to drop by a supermarket. I bought a chicken and some vegetables. We were only going to be three for lunch, so I didn't have to buy a lot of groceries.
I decided to boil the chicken for soup and to add chopped vegetables (onions, carrots, long beans) and corn from a can and I added tomato paste and seasoned the soup with fish sauce, pepper and a tablespoon of rice vinegar.
I shredded the boiled chicken for fried rice. I fried some chopped carrots and long beans with garlic and set them aside, then I fried two eggs, before adding boiled rice (which had been left in the fridge overnight). Then I added the mixed vegetables and shredded chicken and seasoned with fish sauce, soya sauce and pepper.
The mixed vegetable soup and fried rice made a simple meal and took only an hour and a half to cook. One of my friends brought popiah, (shredded turnip wrap), which went well with the rest of the meal. I would say that it was a fairly healthy meal, until we indulged in a calorie-rich dessert of a variety of tarts, which another friend brought.
My friends reminded me of the Thai prawn and fish cakes (served with cucumber sauce) which I had made for another gathering. I didn't realise that I had become known for it, because the mother of my friend who hosted the dinner at her place remembers me as the "friend who makes prawn and fish cakes from scratch".
I am looking forward to cooking more complicated meals again. Circumstances have not allowed me to do much cooking over the past months, but I managed to take up a course on nutrition and health, which will help me to make healthier food choices.
