All big occasions require a lot of planning and work. Christmas celebrations somehow require more planning than other celebrations. This year, there was a lot of planning around music and decorations.
It's easy to order ready-cooked Christmas meals, but home-cooked meals are more special and fun. Everyone has a part to play, even if it is just the washing up.
Tamales for Christmas
I once asked someone from Guatemala what her family has for their Christmas meal. She said tamales, which are common in Mexico and Latin America . A tamale is a corn-based dough with meat, beans or cheese inside. It is wrapped in corn husks and steamed.
Tamales changed my idea of a Christmas meal. It makes sense for people to celebrate with what is locally available and which is considered special. According to Elena, tamales are laborious to make, but they are delicious.
A Thai Christmas menu
I wanted to plan a Thai Christmas menu last year, but I had to put my plans on hold due to unforeseen circumstances. This year I decided to push through with my plans on a small scale, since I only had to cook Christmas lunch for three - my mother, my brother and myself.
The theme was red and green. I decided on massaman curry, which is a less common Thai curry. You will recognise it by the potatoes and peanuts which are not found in other Thai curries. I cooked stir-fried cabbage with garlic and fish sauce, which is a simple and common Thai dish. I made a chicken-in-coconut-milk dip to go with rice crackers. The appetizer was sliced Japanese cucumber with a very hot Thai chili paste. My mother suggested that I cook an omelette with basil leaves.
My brother brought his Takoyaki maker and made kanom krok (coconut pancakes) for dessert.
The Thai Christmas lunch
There was a lot of washing up and clearing up to do, but it was a Christmas to remember.
Traditional Turkey dinner
I asked Elena for photos of the Christmas dinner she planned and cooked. Very traditional, but far from ordinary. There were many details which showed that extensive planning was required. The appetizer drink was a berry margarita!
